Vegan Sausage Omelet

Less prep work is the goal of this recipe

Ingredients:

Frozen Red bell pepper and onion mix, vegan sausage patties, vegan egg (yellow bottle), Salt to taste. 2 tsp extra virgin olive oil.

Directions:

Add Olive oil to pan. Stir fry the onion bell pepper mix. Add in Vegan sausage of your choice (either precooked or uncooked). Cook on medium heat for about 3 minutes. Add Salt. Then add vegan egg product (in the yellow bottle).  

Stir and cook to taste. My 11 year old son likes to almost "burn" his but I like mine just right.

Modification Ideas:

Add anything you want such as fresh leaf spinach, pepper, whole cherry tomatoes.

The beauty of home cooking is that you can do whatever you want and use what's already in your fridge or freezer. So feel free to modify the above recipe anyway you please.
