Best Red Pasta Sauce

Get those veggies into your meals anyway you can. This recipe does just that with a family favorite.

Ingredients:

Any tomato pasta sauce or canned crushed tomatoes (28 ounces)

Carrots ( pureed, 1 cup)

Spinach (2 cups fresh, 1 cup frozen)

Mushrooms (sliced, optional)

Cabbage (1 cup pureed, optional)

Peas (pureed 1 cup, optional)

Rosemary (1/2 tsp)

Basil (1/2 tsp)

Oregano (1/2 tsp)

Extra Virgin Olive Oil (up to1 tbsp)

Salt (to taste)

Onions (1/4 cup chopped or 1 tbsp dry, optional)

garlic (1 tbsp or more, fresh minced or powder)

[Puree small quantities using the smoothie cups of the ninja food processor]

On medium heat, simmer the tomatoes, onions, garlic and extra virgin olive oil for 5 minutes.

Add the rest of the pureed or chopped veggies and simmer for another 10 minutes. Salt to taste. 

Enjoy with your favorite regular or whole wheat pasta!
